The doses were far beyond anything a human could consume through root beer — equivalent to drinking hundreds of gallons a day for years — but the mechanism was clear: safrole was metabolized into a compound that damaged DNA. A Tree That Refuses to Disappear

Sassafras did not retreat from the landscape. The tree is a pioneer species, aggressive and opportunistic, spreading by root suckers to form dense thickets in old fields, forest edges, and disturbed ground. Birds devour the small, blue-black drupes that ripen on bright red stalks in late summer, dispersing seeds across the region. In many areas, sassafras is considered weedy, its seedlings popping up in lawns and fencerows with the persistence of dandelions.

This reproductive vigor means the tree remains abundant despite the loss of its commercial value. Foragers today still encounter it on almost any walk through eastern woodlands. The ethical calculus has shifted, though. Harvesting root bark kills the tree, and with no legal market for the product, there is little justification for digging it. The leaves, however, can be gathered sustainably — snipping a few from each branch, leaving the crown intact. A modest harvest yields enough filé powder for a season of gumbos, and the tree hardly notices.

The Flavor That Persists

Modern root beer bears little resemblance to its sassafras ancestor. Artificial flavors approximate the top notes, but the depth — the resinous warmth, the faint vanilla undertone, the lingering spice — is gone. Some craft producers have returned to safrole-free sassafras extracts, made by vacuum-distilling the root bark to remove the regulated compound while retaining other aromatics. The result is closer, but purists argue it lacks the soul of the original.

In a cast-iron pot in Lafayette or New Orleans, the story takes a different turn. A pinch of greenish filé powder, stirred into gumbo at the very end of cooking, releases the same sweet, woody aroma that once rose from root beer barrels. The flavor survives, not in the root that the FDA banned, but in the leaves the regulators forgot.
