CHAPTER ONE: Factory Farms and the Postwar Poultry Boom

In 1928, the Republican National Committee published a campaign advertisement on behalf of Herbert Hoover promising a future built on American economic prosperity. The ad promised "a chicken in every pot and a car in every garage." To modern readers, the phrase sounds like modest, down-home imagery—the political equivalent of promising warm soup on a rainy day. But in the late 1920s, putting a chicken in every pot was an audacious, almost extravagant promise.

At the time, chicken was not the cheap, ubiquitous protein that fills the freezer aisles of modern supermarkets. It was a luxury product, far more expensive per pound than beef or pork. For most Americans, eating chicken was an event reserved for Sunday dinner, high holidays, or sick days. Farms did not raise chickens primarily for their meat; birds were kept for their eggs. Older hens that had stopped laying, along with excess roosters, were eventually killed and tossed into a pot to simmer for hours because their flesh was tough, stringy, and lean. A young, tender bird—what was then called a "spring chicken"—was a rare seasonal delicacy, harvested only when young males were culled from farmyard flocks in late spring.

The idea that chicken could be raised continuously, in vast numbers, solely for its meat was virtually nonexistent. The biology of the bird and the limitations of traditional agriculture simply would not allow it. Outside, chickens required sunlight to synthesize Vitamin D; without it, their bones would grow brittle and collapse under their own weight—a condition known as rickets. In cold weather, birds had to be kept outdoors or near open windows, exposing them to predators, heat loss, and disease. A flock of fifty birds was considered large, and a farmer who managed to raise a few hundred in a year was running an unusually ambitious operation.

Three decades after Hoover’s campaign promise, the world had completely inverted. By the late 1950s, chicken was no longer a Sunday luxury; it was the cheapest, most abundant meat in the United States. The transformation was so rapid, so radical, and so technologically thorough that it stands as one of the most explosive revolutions in the history of human agriculture. Through a combination of nutritional chemistry, industrial engineering, genetic selection, and cutthroat business modeling, American agriculture had unlocked the code to mass-producing biological life. In doing so, it created an industrial engine of breathtaking productivity—one that would soon produce far more poultry than the American market could swallow.


The foundation of the modern poultry industry was laid not in the vast cornfields of the Midwest, but along the sandy coastal plains of the Delmarva Peninsula, a stretch of land encompassing parts of Delaware, Maryland, and Virginia. In 1923, a farm woman named Cecile Steele from Ocean View, Delaware, ordered fifty chicks from a local hatchery to replenish her egg-laying flock. Through a clerical error, the hatchery delivered five hundred chicks instead.

Rather than sending the extra four hundred and fifty birds back, Steele built a small, heated wooden shed and decided to raise the entire lot indoors for meat. She fed them a basic diet of grain, kept them warm through the damp winter months, and sold the surviving birds when they reached two pounds. The venture yielded a startling profit. The following year, she ordered a thousand chicks. Steele had stumbled onto the concept of the specialized "broiler"—a bird raised exclusively for young, tender meat rather than eggs. Yet, early broiler producers faced hard biological limits. Raising birds densely indoors during winter remained risky. Without access to natural sunlight, winter flocks frequently developed soft bones, paralyzed legs, and high mortality rates.

The breakthrough came in the 1920s and 1930s with the discovery of Vitamin D and its chemical synthesis. Agricultural scientists realized that by fortifying grain feed with synthetic Vitamin D and cod liver oil, chickens could be kept indoors indefinitely, completely sheltered from the elements, without developing skeletal deformities. Sunlight was no longer a requirement for animal growth.

This single discovery decoupled animal husbandry from nature and the seasons. Farm buildings no longer needed windows or large open runs; they could be long, dark, insulated sheds where temperature, light, water, and food were meticulously controlled. Free from the constraints of weather and climate, chicken production could run twenty-four hours a day, three hundred and sixty-five days a year.

As indoor confinement solved the environmental problem, a feed salesman in North Georgia named Jesse Jewell was busy solving the economic one. During the height of the Great Depression, the cotton economy in North Georgia was collapsing under the dual plagues of the boll weevil and soil exhaustion. Farmers in Hall County were broke, desperate, and unable to purchase feed for their livestock.

Jewell, who ran his family’s feed business in Gainesville, realized that selling feed to bankrupt farmers on credit was a recipe for ruin. He devised a system that shifted the financial equation entirely. Instead of selling feed to farmers, Jewell bought day-old chicks from hatcheries and supplied them to the farmers on credit, along with his own feed. The farmers provided the land, the brooder houses, and the labor required to raise the birds. Once the birds reached market weight, Jewell bought them back, deducted the cost of the chicks and feed, and paid the farmer for their labor based on how much weight the flock had gained.

This arrangement was the birth of "vertical integration," a corporate structure that would come to define modern animal agriculture. Jewell did not stop at feed and chicks. He realized that the real bottlenecks lay further down the supply chain. He built his own processing plant to slaughter and dress the birds, established his own processing facilities, and bought refrigerated trucks to haul the finished meat to urban centers across the South.

By controlling every stage of production—from the egg in the incubator to the packaged carcass in the store—Jewell eliminated middleman markups and minimized financial risk. If feed prices spiked, he could absorb the cost through his processing profits; if poultry prices dropped, he could squeeze efficiency out of his feed formulations.

Farmers were no longer independent producers setting their own prices in a open market; they were contractors operating within a single, tightly orchestrated industrial machinery. The model proved irresistibly profitable. Other entrepreneurs copied Jewell’s blueprint, and North Georgia, along with parts of North Carolina, Arkansas, and Delmarva, transformed into a sprawling factory system for living animals.


While vertical integration organized the supply chain, a radical experiment in applied genetics was transforming the animal itself. In 1945, the Great Atlantic & Pacific Tea Company—better known as A&P, then the largest grocery store chain in North America—launched a national competition that sounded like a piece of science fiction: the "Chicken of Tomorrow" contest.

A&P’s goal was simple, commercially driven, and explicitly industrial. The grocery chain wanted a standardized, fast-growing bird with broad breast meat, plump thighs, yellow skin, and short legs—a bird designed specifically to maximize meat yield while minimizing waste. Traditional chickens were thin, long-legged, and diverse in shape and color. A&P wanted a uniform product that could be mass-processed, packaged in neat cellophaned trays, and sold predictably in suburban supermarkets.

The contest was organized with military precision. Agricultural universities and private breeders across forty-four states submitted eggs to centralized testing facilities, where they were hatched and raised under identical environmental and dietary conditions. The birds were weighed, measured, slaughtered, and evaluated on raw carcass quality, feed efficiency, and growth speed.

The results of the contest, which concluded with a grand national finale in 1948, changed the species forever. The winners were hybrid birds created by crossing the broad-chested White Cornish male with the hardy, fast-growing New Hampshire female. This crossbreed produced offspring that grew at a rate that shocked traditional livestock farmers.

Before the contest, taking a bird from a hatchling to a three-pound market weight required sixteen weeks and roughly twelve pounds of feed. The newly engineered hybrid lines cut that time down dramatically. The birds grew so fast, and developed such enormous breast muscles, that their physical geometry shifted entirely.

Commercial breeders bought up the winning genetic strains and refinement accelerated. Breeding companies like Arbor Acres and Vantress Hatcheries turned genetics into an exact science, selecting traits for growth rate, feathering speed, and feed efficiency with relentless mathematical focus. Through artificial selection, the chicken was re-engineered into an astonishingly efficient biological processor: a living machine built for the single purpose of converting grain into meat in the shortest possible time.

To fuel these hyper-engineered birds, scientists turned their attention to the chemical composition of feed. The postwar era saw the birth of modern nutritional biochemistry, and the chicken became its primary testing ground.

Researchers at land-grant universities discovered that adding small, sub-therapeutic doses of antibiotics—such as Aureomycin—to daily poultry feed altered the gut flora of young birds, preventing subclinical intestinal infections and allowing them to absorb nutrients faster. The birds grew fifteen to twenty percent faster on the exact same amount of feed.

At the same time, the American Midwest was producing vast, record-breaking surpluses of yellow corn and soybeans. Nutritionists learned how to combine energy-dense corn with solvent-extracted soybean meal, fortification packs of synthetic vitamins, minerals, and amino acids like methionine. The result was a high-octane biological fuel tailored specifically to the genetic capacity of the modern broiler.

Every variable in the chicken's environment was measured, logged, and optimized. Automatic watering cups replaced rusty metal troughs; mechanical augers pulled feed through long wooden sheds, dropping exact portions into pans; automatically controlled fan systems regulated temperature and airflow to keep birds from burning calories on body-temperature regulation.

The numbers told a story of staggering industrial efficiency. In 1940, it took almost 14 weeks and 5 pounds of feed to produce 1 pound of live chicken meat. By 1960, that same pound of meat required less than 2.5 pounds of feed and took just 8 weeks to grow. The modern farm was no longer an open field under the sky; it was a closed, high-throughput manufacturing plant.


The final link in the chain was the mechanization of the processing plant. In the early days of the industry, slaughtering chickens was a slow, bloody, and manual process. Workers wrung necks, dunked carcasses into pots of hot water to loosen feathers, and hand-plucked each bird before gutting it over zinc tubs. It was a messy, localized trade that kept costs high and production volumes low.

Postwar engineering swept away the old butcher's floor and replaced it with modern disassembly lines modeled on Detroit's automotive assembly plants. Birds were brought to the plant in crates, hung upside down by their legs from an overhead monorail conveyor, and carried through a continuous automated system.

The conveyor moved the birds through an electrified water bath that stunned them instantly, through an automated rotary knife that slit their throats, and into a steam-scalding tunnel. From there, the carcasses passed through automated rubber-fingered picking machines that whirred at high speeds, stripping away feathers in seconds without tearing the skin. Continuous-line evisceration, automated washing stations, and massive chilling vats cooled thousands of birds an hour down to temperatures that slowed bacterial growth.

The application of continuous mechanical processing meant that a single rural processing plant could slaughter, clean, and pack tens of thousands of birds in a single shift. Advances in commercial refrigeration and the expansion of the Interstate Highway System meant those birds could be packed in crushed ice, loaded into refrigerated semi-trucks, and delivered to super-market meat counters hundreds of miles away within twenty-four hours.

The consumer experience of buying meat changed almost overnight. Instead of visiting a specialized butcher shop to buy a whole, un-eviscerated bird with head and feet attached, shoppers in newly built suburban grocery stores walked up to refrigerated self-service counters. There, neat foam trays wrapped in clear plastic held pre-cut legs, thighs, and skinless breasts, fully prepped and ready for the pan.

Because the integrated system had stripped out so much labor and time, the cost of this meat plunged. Between 1950 and 1960, while the retail price of beef and pork climbed steadily alongside general inflation, the price of chicken plummeted by more than forty percent.

For the American consumer, this was an unmitigated victory. Chicken turned into the ultimate budget-friendly, high-protein staple of mid-century suburban life. Fried chicken became a mid-week family regular rather than a rare Sunday treat. Rotisserie ovens spun in grocery store windows, and backyard suburban barbecues filled neighborhood air with the smoke of cheap chicken legs.

For the chicken integrators, however, this miraculous efficiency created a dangerous new problem: extraordinary, chronic overproduction.

The modern industrial broiler operation was built on massive volume and razor-thin profit margins. A feed mill, automated hatchery, and processing plant required huge, fixed capital investments. To pay down the debt on these facilities and turn a profit, the integrated companies had to keep their plants running at maximum capacity. Pausing production meant immediate financial death.

As a result, American poultry integrators kept producing more birds every year, regardless of whether domestic prices were rising or falling. If prices dropped, the only way an individual producer could maintain revenue was to increase volume even further, driving down prices even more.

By the late 1950s, the domestic market was thoroughly drenched in chicken. American per capita consumption of broiler meat jumped from five pounds a year in 1940 to over twenty-six pounds by 1960. Americans were eating more poultry than any culture in human history, but they simply could not keep up with the relentless, compounding output of the factory farms.

The market was systematically glutted. Wholesale prices tumbled to levels that threatened to wipe out whole swaths of the industry. Processing plants operated around the clock, cold storage warehouses were packed to the rafters with frozen birds, and integration barons looked out over an ocean of cheap protein with a growing sense of desperation.

The industry had built the most efficient meat-producing machine the world had ever seen, but its own success was choking it. American agriculture had solved every biological, chemical, and mechanical limit to growing birds. Now, it faced a purely commercial boundary: the limits of the domestic stomach.

If the industry was going to survive its own unbelievable productivity, it desperately needed to find millions of new mouths to feed. It needed to export. And as fortune would have it, across the Atlantic Ocean lay a continent rebuilding from war, where citizens were hungry, agricultural production was still recovering, and chicken was still considered a rare and expensive luxury.
