Chronic tendonitis in the extensor muscles of the forearm was taken for granted. The division of labor around the trough was strictly hierarchical. Pushing hydration to sixty or sixty-five percent made the dough stickier, adhering tenaciously to the rough grain of the wooden boards and turning the kneading process into an agonizing game of scrape-and-haul.

To clear the wood, bakers used a flat iron tool known as a coupe-pâte or raschietto. Every few minutes, the kneading had to halt while the worker scraped down the inner walls of the trough, peeling off sticky sheets of drying dough before they could form hard crusts that would later ruin the texture of the bread with unhydrated lumps. These scrapings were worked back into the heart of the mass, a tedious task that interrupted whatever physical rhythm the baker had managed to establish.

Temperature control under this system was entirely primitive and relied on instinct honed by seasonal suffering. The sheer physical exhaustion dictated the scale of the business. A master baker with two journeymen could reasonably produce only a few hundred loaves per day before the men collapsed from muscle fatigue. The day did not begin with mixing; it began with the realization that yesterday’s blisters were now open sores, and that sixty kilograms of stiff rye or wheat sat waiting in the corner of the cellar.

"My father lost his left shoulder when he was forty-two," Bellandi says. "The joint simply locked up. The doctor told him he had worn away the cartilage just from the repetitive pulling of the dough out of the trough corners. He couldn't lift his arm high enough to comb his hair, but he could still stand over the box and use his good right arm to guide the apprentice's hands. That was how you lived. You used up your body to make the neighborhood’s bread, and when your arms gave out, you hoped your son was big enough to take the other side of the trough."

There was also the ever-present problem of hygiene and physical contamination, an issue that urban health authorities began targeting aggressively in the early decades of the twentieth century. Hand-kneading was impossible to perform without heavy physical exertion, and in a poorly ventilated underground room heated by a brick oven, sweating was inevitable. Bakers worked stripped to the waist, wearing only canvas trousers and flour sacks pinned around their waists as makeshift aprons. Droplets fell where they fell. The trade had an unspoken tolerance for these realities, but municipal inspectors were beginning to write scathing reports about the conditions inside basement bakeries across Europe’s capitals.

Beyond the sweat, the wooden troughs themselves were impossible to sterilize. Microscopic cracks in the timber harbored wild yeasts, bacteria, and weevils. While this resident flora often gave a particular bakery's bread its unique neighborhood character, it also meant that a single bad batch of levain could contaminate the wood for months, turning every subsequent bake sour, gummy, or ropey. Cleaning the trough was an arduous chore performed at the end of an eighteen-hour shift: the wood was scraped dry, scrubbed with wire brushes or coarse salt, and wiped with dry rags.
