Introduction

Few companies can claim to shape the everyday experiences of billions of people across the globe as subtly and profoundly as International Flavors & Fragrances Inc. (IFF). From the aroma of a favorite perfume to the taste of a cherished snack, from the subtle texture in plant-based foods to the healthful ingredients in dietary supplements, IFF’s innovations are woven into the fabric of modern life. Yet, the story of IFF is far more than a technical tale of molecules and markets—it is a living chronicle of scientific ambition, global growth, and relentless adaptation in the face of shifting social, economic, and environmental demands.

This book, International Flav/Frag: The Story of An American Company, is an exploration of that journey. Tracing its roots to two entrepreneurial ventures—Polak & Schwarz of the Netherlands and van Ameringen-Haebler of the United States—IFF has evolved from a regional player in the late 19th century into a powerhouse at the forefront of the world’s taste, scent, and nutrition industries. Its path has been marked by critical mergers, bold acquisitions, and unceasing innovation, all underpinned by a vision for improving daily life through the power of science and creativity.

Throughout more than a century of change, IFF has continually redefined what it means to be a leader in specialty ingredients, from the pioneering days of “Living Flower Technology” in fragrance to state-of-the-art biotransformation in flavors and health solutions. Alongside its dramatic growth, IFF has faced its share of challenges: shifting regulatory landscapes, economic turbulence, integration of acquired businesses, and an ever-increasing demand for ethical and sustainable practices. Each chapter of this book explores a different facet of the company’s evolution, delving into the technologies, people, and cultural changes that have defined its legacy.

Importantly, International Flav/Frag does not merely present a linear history. It seeks to illuminate how visionary thinking and adaptability have enabled IFF to not just survive, but thrive amid disruption and opportunity. Readers will discover how the company’s pioneering scientific collaborations, international footprint, and unwavering focus on customer partnership have positioned it as a linchpin in a radically changing global marketplace.

As IFF stands poised at the crossroads of its past achievements and future ambitions, this book examines not just its triumphs and struggles, but its aspirations. The narrative encompasses the impact of global leadership changes, strategic divestitures and acquisitions, and the continued investment in sustainability and innovation that are reshaping both the company and the broader industry it inhabits. We investigate how IFF is harnessing its collective expertise to tackle society’s pressing challenges—reducing environmental impact, supporting supply chain communities, and creating products that meet evolving consumer expectations.

Through the lens of one exceptional American company, we gain insight into the forces shaping the future of food, fragrance, health, and wellbeing around the world. In the pages that follow, International Flav/Frag invites you to discover how the pursuit of taste, scent, and experience—grounded in science and guided by a sense of responsibility—can transform not just products, but lives.

CHAPTER ONE: Roots in Europe: The Founding of Polak & Schwarz

The story of International Flavors & Fragrances, or IFF as it is widely known today, begins not in the bustling metropolis of New York City, but in the quaint, historic town of Zutphen, Netherlands. It was here, in 1889, that two enterprising individuals, Leopold Schwarz and Joseph Polak, laid the groundwork for what would eventually become a global leader in taste and scent. They were, in fact, brothers-in-law, a family connection that often characterized early entrepreneurial ventures, blending personal trust with business ambition.

Leopold Schwarz, whose full name was Levi Schwarz, had a background in sales, having worked with bakery ingredients since his teenage years. This experience likely instilled in him an understanding of consumer preferences and the practicalities of commerce. His passion, however, lay in the more evocative world of spices and essences. Joseph Polak, his brother-in-law, joined him in this endeavor, and together they transformed a "kitchen table startup" into Polak & Schwarz. Their initial focus was on producing concentrated fruit juices, and from there, they expanded into the broader realm of flavors and oil essences.

Zutphen, a city with a rich medieval history, might seem an unlikely birthplace for a company destined to become a global industrial giant. Yet, its location in the Netherlands, a nation with a long tradition of trade and exploration, provided a fertile ground for such a venture. The late 19th century was a period of burgeoning industrialization and increasing consumer demand for novel and consistent products. This environment offered ample opportunities for businesses that could provide specialized ingredients to burgeoning food and beverage industries.

Polak & Schwarz quickly made a name for itself. The company's early success stemmed from its ability to produce high-quality flavors and fragrances, which were becoming increasingly vital to a wide range of consumer goods. Their commitment to these sensory experiences allowed them to expand rapidly, establishing themselves as a significant presence in Europe. The business was so successful that, within seven years of its founding, in 1896, the company relocated its main factory to Zaandam. This move was driven by the need for larger facilities to accommodate their expanding operations, a testament to their early growth and ambition.

While the physical location of their primary production moved, the family ties remained strong, and the company continued to thrive under their leadership. They carved out a reputation, particularly in the realm of flavors, becoming known for their expertise in crafting the very essences that made food and drink more appealing. This specialized focus would prove to be a crucial element in the company's long-term trajectory.

The early 20th century saw continued expansion for Polak & Schwarz. They were not content with merely serving the European market; their sights were set on a more global presence. This ambition led them to establish a significant international footprint, eventually operating 36 sites across the world. This extensive network demonstrated their foresight and their understanding of the burgeoning global economy.

However, the international landscape was far from stable. The specter of two World Wars would cast a long shadow over European businesses, and Polak & Schwarz was no exception. Despite these looming challenges, the company continued to innovate and adapt. Their ability to navigate the complexities of international trade and political upheaval would be a recurring theme throughout their history.

In 1917, a pivotal moment occurred in the company’s narrative when Joseph Polak, one of the co-founders, left the firm. While the exact reasons for his departure are not widely detailed, Leopold Schwarz continued to steer the company forward, demonstrating a resolute determination to build upon the foundations they had laid. This transition marked a new phase for Polak & Schwarz, as it continued its journey of growth and international expansion under the sole leadership of Leopold Schwarz.

The period leading up to the merger that would form IFF was fraught with challenges for Polak & Schwarz. While their American counterpart, van Ameringen-Haebler, was on an upward trajectory, the Dutch firm faced significant headwinds. Import restrictions in the United States, coupled with the economic downturn of the Great Depression, negatively impacted their sales in various countries.

The outbreak of World War II and the subsequent German occupation of Holland brought even greater difficulties. Policies that banned Jewish ownership and management of companies, combined with the conscription of young men into the workforce, severely weakened Polak & Schwarz. Despite these immense pressures, the company endured, a testament to its strong foundation and the resilience of its people.

The story of Polak & Schwarz is a foundational chapter in the larger narrative of International Flavors & Fragrances. It speaks to the power of entrepreneurial spirit, the strategic importance of sensory ingredients, and the enduring nature of a company born from a simple idea in a small Dutch town. Their early focus on flavors, their rapid global expansion, and their perseverance through tumultuous times set the stage for the remarkable merger that would ultimately give rise to IFF, an American company with deep European roots.
