Another important disaccharide is lactose, the sugar found naturally in milk and dairy products. It consists of one glucose unit linked to one galactose unit. Lactose is significantly less sweet than sucrose, which is why milk doesn't taste overly sugary. People who are lactose intolerant lack sufficient amounts of the enzyme lactase needed to break this bond during digestion. Finally, maltose, or malt sugar, is composed of two linked glucose units. Our taste receptors perceive these molecules differently, leading to varying levels of perceived sweetness. Fructose generally tops the chart, followed by sucrose, then glucose, maltose, and finally lactose. Using honey (rich in fructose and glucose) instead of table sugar (sucrose) might require adjusting the amount for equivalent sweetness, and it will also introduce different flavor nuances.

Sugars are also highly soluble in water. Their chemical structures contain numerous hydroxyl (-OH) groups, which are polar and readily form hydrogen bonds with water molecules, allowing them to dissolve easily. Cooks employ various strategies to manage this, such as using interfering agents – substances like glucose syrup, corn syrup, honey (invert sugar), fats, or acids – which disrupt the regular lattice structure needed for large crystals to form, resulting in smoother textures. Conversely, controlled crystallization is desired for making rock candy or certain types of fondant.

Beyond sweetness and browning, sugars significantly impact texture. In baking, sugar tenderizes doughs and batters. It does this partly by competing with starch and proteins (like gluten) for water. By absorbing water, sugar limits starch gelatinization and gluten development, leading to softer, less chewy results – think of the difference between a tender cake and chewy bread. Sugar also raises the coagulation temperature of egg proteins, which is why custards made with more sugar require slightly higher temperatures or longer cooking times to set, often resulting in a smoother texture if done carefully. Furthermore, sugar lowers the freezing point of water, a crucial property for making smooth ice creams and sorbets, as it limits the formation of large, crunchy ice crystals.

Now, let's move beyond the simple sugars to the giants of the carbohydrate world: the complex carbohydrates, or polysaccharides. These are long polymers made up of hundreds or even thousands of monosaccharide units (usually glucose) linked together. Despite being made of sugar units, most polysaccharides are not sweet because their large size prevents them from interacting effectively with our sweet taste receptors. The two most important types in cooking are starch and fiber.

Starch is the primary way plants store energy, analogous to glycogen in animals. It's essentially a long chain (or many chains) of glucose molecules linked together. Starch is stored in plants in the form of tiny, densely packed structures called granules, found abundantly in roots (potatoes, cassava/tapioca), tubers, seeds (corn, wheat, rice), and legumes. These granules have a semi-crystalline structure and are insoluble in cold water. When you mix cornstarch with cold water, it simply disperses, forming a cloudy suspension.

The real magic of starch happens when heat and water are introduced, a process called gelatinization. As starch granules are heated in water, typically starting around 60-70°C (140-160°F) depending on the starch type, they begin to absorb water. The granules swell significantly, disrupting their internal crystalline structure and becoming softer and more translucent. As heating continues and more water is absorbed, the granules eventually rupture, leaching out the long starch molecules into the surrounding liquid. These freed starch molecules then tangle with each other and trap water molecules, dramatically increasing the viscosity of the liquid – it thickens. This is the fundamental principle behind using flour or cornstarch to thicken sauces, gravies, and pie fillings, as well as the process that cooks pasta, rice, and oatmeal, transforming them from hard grains into soft, palatable food.

Not all starches behave identically, largely due to the two main types of glucose polymers they contain: amylose and amylopectin. Amylose consists of long, linear chains of glucose. Amylopectin, on the other hand, has a highly branched structure. The ratio of amylose to amylopectin varies depending on the plant source. Starches high in amylose (like cornstarch and wheat flour) tend to form opaque gels that set firmly upon cooling because the linear chains can align easily. Starches high in amylopectin (like tapioca, potato starch, and 'waxy' corn or rice starches) tend to produce clearer, viscous solutions that don't gel as firmly but remain thick. This is why cornstarch is often preferred for a firm pudding, while tapioca might be used for a glossy pie filling. Long-grain rice, higher in amylose, cooks up fluffy and separate, whereas short-grain rice, higher in amylopectin, becomes sticky, ideal for risotto or sushi.

Several factors influence starch gelatinization. Temperature is crucial; sufficient heat is needed to initiate swelling and bursting. There must be enough water available for the granules to absorb. Vigorous agitation can help disperse starch and prevent lumps, but excessive stirring, especially after thickening has occurred, can physically break down the swollen granules and shear the starch molecules, leading to a thinner consistency. Acidity can also weaken starch; adding acidic ingredients like lemon juice or vinegar early in the cooking process can hydrolyze the starch molecules, reducing the thickening power. It's often better to add acids towards the end of cooking. Sugar competes with starch for water, slowing down swelling and increasing the temperature needed for gelatinization. High sugar concentrations can result in less thickening and a clearer appearance. Fats and proteins can coat the starch granules, slightly hindering water absorption and gelatinization.

Once a starch has gelatinized and the food cools down, another process called retrogradation can occur. The dispersed starch molecules, particularly the linear amylose chains, gradually start to realign themselves into more ordered, crystalline structures, squeezing out the trapped water (a phenomenon called syneresis). This is responsible for the staling of bread (where the crumb becomes firm and dry), the formation of a skin on top of cooled puddings or sauces, and the tendency for leftover pasta or rice to become firm and less tender. Starches high in amylopectin, with their branched structure hindering realignment, are less prone to retrogradation, which is why sauces thickened with waxy starches often hold up better to storage and reheating. Freezing and thawing significantly accelerate retrogradation, causing undesirable texture changes in many starch-thickened products.

The other major group of complex carbohydrates is dietary fiber. These are also polysaccharides found in plants, but their chemical structure, particularly the bonds linking the sugar units (often glucose), makes them indigestible by human enzymes. Cellulose is the most abundant organic compound on Earth, forming the rigid structural framework of plant cell walls. Like starch, it's a polymer of glucose, but the glucose units are linked by different bonds (beta-glycosidic bonds) that our digestive enzymes cannot break. Cellulose provides bulk and structure to vegetables, fruits, and whole grains. It doesn't dissolve in water or thicken sauces like starch; instead, it contributes to the crispness of raw vegetables and the fibrous texture of cooked ones.

Another important type of fiber, especially in fruits, is pectin. Pectins are complex, branched polysaccharides found in the cell walls and intercellular spaces of plants, acting as a sort of cellular glue. While indigestible, pectin has a remarkable culinary property: under specific conditions – namely, in the presence of the right concentration of sugar and sufficient acidity – it can form a gel. This is the principle behind making jams, jellies, and marmalades. The sugar draws water away from the pectin molecules, allowing them to interact and form a network, while the acid helps neutralize negative charges on the pectin chains that would otherwise cause them to repel each other. Different fruits contain varying amounts and types of pectin, influencing their natural setting ability. Commercial pectin is often added to ensure a reliable set.

Beyond starch and fiber, other polysaccharides known as gums (like xanthan gum, guar gum, locust bean gum) and hydrocolloids are increasingly used in cooking, often sourced from plants, seaweed, or microbial fermentation. These substances can absorb large amounts of water, forming viscous solutions or gels even at low concentrations. They are valued as thickeners, stabilizers (preventing ingredients like oil and water from separating), and texture modifiers, particularly in gluten-free baking and modern culinary techniques (which we'll touch upon in Chapter 10).
