  5. Simmer: Pour in the Shaoxing wine and stir to deglaze the pan. Add the chicken or vegetable stock, soy sauce, and sugar. Bring the mixture to a boil.

  6. Combine and Thicken: Gently slide the drained tofu into the wok. Use a spatula to gently push the tofu into the sauce, trying not to break the cubes. Reduce the heat to a simmer and cook for 3-5 minutes to allow the tofu to absorb the flavors. Give the cornstarch slurry a quick stir and then slowly pour it into the simmering sauce while gently stirring. Continue to cook until the sauce thickens and becomes glossy, about 1-2 minutes.

  7. Serve: Transfer the Mapo Tofu to a serving bowl. Sprinkle with the ground Sichuan peppercorn powder and garnish with the sliced scallions. Serve immediately with hot steamed rice.
