The true origins of sparkling wine are somewhat murky, with claims and counter-claims spanning different regions and centuries. It's generally believed that naturally sparkling wines first appeared in the Limoux region of Languedoc, France, as early as the 16th century. Local Benedictine monks at the Abbey of Saint-Hilaire are credited with producing Blanquette de Limoux, a naturally sparkling wine, around 1531. This early method, now known as the "Ancestral Method" or Pétillant Naturel (Pét-Nat), involves bottling the wine before its primary fermentation is complete, allowing the fermentation to finish in the bottle and trap the CO2. It was likely a serendipitous discovery, with cold winter temperatures halting fermentation, which then restarted in the warmth of spring, creating bubbles in the sealed bottles.

Interestingly, the earliest documented intentional process for creating sparkling wine emerged not in France, but in England. In 1662, Dr. Christopher Merret, an English scientist, presented a paper to the Royal Society in London detailing how to make bottle-fermented sparkling wine. This was nearly 30 years before Dom Pérignon arrived at Hautvillers. Merret’s paper described cider makers adding sugar to dry cider before bottling, leading to a secondary fermentation and sparkling cider. The English also had a crucial advantage: stronger, coal-fired glass bottles, which were more capable of withstanding the immense pressure generated by trapped carbon dioxide, unlike the weaker, wood-fired glass prevalent in France at the time. They were also using cork as a stopper years before the French. This allowed them to deliberately produce and store sparkling wines without the constant threat of exploding bottles.

Despite these early English advancements, it was in France’s Champagne region that sparkling wine truly began its ascent to global renown. By the 17th century, still wines from Champagne were already gaining popularity, particularly among the French aristocracy. The occasional sparkling "fault" in these wines, initially considered undesirable, slowly began to intrigue consumers. As the 18th century progressed, the demand for sparkling Champagne grew, particularly in the English market, which had a taste for effervescent wines and was willing to pay a premium for their novelty and prestige. This burgeoning demand fueled innovation within Champagne.

The development of what we now call the Traditional Method (or Méthode Champenoise, a term legally reserved for wines from Champagne) was a gradual process, building on empirical observations and scientific understanding. Early Champagne producers faced significant challenges, primarily the unpredictable nature of secondary fermentation and the problem of exploding bottles. It wasn't until 1735 that the cork and wire cage, known as a muselet, were invented, providing a more effective way to manage the carbonation and prevent corks from being forced out by the internal pressure. This seemingly simple invention was a game-changer, allowing winemakers greater control over the sparkling process.

Key innovations continued to shape the Traditional Method throughout the 18th and 19th centuries. Madame Clicquot, a formidable figure in Champagne history, is credited with developing the riddling process (remuage) in 1816. This technique allowed for the systematic collection of yeast sediment in the neck of the bottle, making its removal much cleaner and more efficient, and paving the way for clear, brilliant sparkling wines. Prior to this, sparkling wines were often cloudy due to the lees remaining in the bottle. Around the same time, pharmacist André François precisely quantified the relationship between sugar and carbon dioxide production, providing winemakers with the scientific understanding needed to control effervescence and sweetness levels with greater accuracy.

While the Traditional Method was evolving in Champagne, other regions were also exploring sparkling wine production. In Italy, the Charmat method (also known as the Martinotti method or tank method) was developed. Federico Martinotti patented the process in 1895, and Eugène Charmat refined and patented it in France in 1907, hence its dual naming. This method offered a faster and more cost-effective way to produce sparkling wines, particularly those intended to be fresh and fruit-forward, without the extensive aging on lees characteristic of the Traditional Method. The ability to perform secondary fermentation in large pressurized tanks made high-volume production feasible and consistent.

The 20th century saw a global sparkling wine boom, driven by ongoing technological advancements and shifting consumer preferences. Countries like the United States, Australia, and New Zealand began producing high-quality sparkling wines, often adopting both the Traditional and Charmat methods.
